Ingredients:
1/4 cup granulated sugar
1/4 cup apple cider vinegar
1 1/4 cups corn
1/2 cup vegetable oil
1 red bell pepper, diced
1 cup celery, diced
1 cup sweet onion, diced
2 jalapenos, seeded and minced
1 can black beans, rinsed and drained
1 can black eyed peas, rinsed and drained
1 avocado, diced, toss lightly in lime juice to preserve color
salt
Directions:
1. Combine sugar and vinegar in large microwave-safe bowl. Heat in microwave about 1 minute, until sugar dissolves, stir.
2. Add corn and oil, stir to combine. Add remaining ingredients, toss. Season with salt to taste.
